Robert's Recipes - Pancakes

Pancakes are a simple food to prepare. The first recipe, using white flour, is fairly standard. I have also provided a whole wheat recipe which can be varied for different grains. The character in Pancakes was probably using one of these recipes.

Standard pancake recipe
Dry Wet

1 cup flour
1 tbsp. sugar
3/4 tsp. baking powder
1 tsp baking soda
1/2 tsp. salt

1 egg
1 cup milk (sour is OK)
2 tbsp. oil (not including the oil you grease the pan with)

Mix the wet ingredients in one bowl, the dry in another, and then add the dry ingredients to the wet ones. The consistency should be fairly liquid.

Pre-heat your griddle or frying pan to a medium temperature.
Heat some oil or butter.
Cook the pancakes until the bubbles burst on the first side, then turn and cook the second side.

Feeds about 3.

Whole wheat pancake recipe
Dry Wet

2 cups whole wheat flour
2 tsp. baking powder
1 tsp baking soda
1 tsp. salt

2 eggs
1 cup milk or buttermilk
2 tbsp. butter or oil (not including the oil you grease the pan with)
1 tbsp. molasses

Mix the wet ingredients in one bowl, the dry in another, and then add the dry ingredients to the wet ones. The consistency should be fairly liquid.

Pre-heat your griddle.
Heat some oil or butter.
Cook the pancakes until the bubbles burst on the first side, then turn and cook the second side.

Feeds about 5.

Another mixing option is to first mix the wet ingredients, next mix in the baking powder and baking soda, then add the other dry ingredients. This requires only one mixing bowl and, in the order given, the baking soda and baking powder will be evenly mixed.
